Originally from Ontario, Michelle MacKinnon relocated to Los Angeles, California, where she worked in the motion picture industry for 15 years. In 2020, during the COVID-19 pandemic, she was gifted a specialty bread book by her husband, Michael, which allowed her reputation as a talented baker to flourish. Gaining interest on social media, she tracked her progress and recruited bread tasters to create her four signature sourdough recipes. In April 2022, Michelle moved back to eastern Ontario to renovate and open her bakery space Whole Note Grains Co.
“Our Company is guided by the principles of nutrition and incorporates local or regionally sourced ingredients into all our breads,” explains owner and head baker Michelle. “Whole Note Grains Co. is created to serve the growing City of Quinte West and Hastings County in south eastern Ontario, and offer customers hand crafted, small batch, whole grain European style hearth breads, naturally leavened and traditionally fermented.”
Whole Note Grains Co. offers customers locally produced bread three times a week as an alternative to store-bought bread. Their bread takes three days to make from fermentation to oven. “Most grocery store bread satisfies a quick need to layer meat, cheese and lettuce in a convenient envelope, but good bread has a flavor, texture and aroma, intensely local, and connects us instantly to our family, community, and human history,” states Michelle.
